About this coffee:
Bali is where we do a bunch of different things: from small-scale experimental projects all the way to serious scaled-up operations. The Bumi profile that comes out of Bali is one of those examples. We were thinking of doing a simple, streamlined production line and the folks from Karana helped built a massive 7,000 litre ceramic tank that can facilitate this.
This Bumi was processed using a full washed technique. Full washed coffee is the most common coffee process in a region with an accessible water source. The fresh ripe cherries are picked and the floaters are sorted first before the cherries are pulped by depulper. The pulped cherries are then inoculated with S. cerevisiae based inoculant in the open tank. We then let the beans ferment until reached a desired pH.
After fermentation, the beans were then washed off before dried on raised beds to allow air to flow around the fruit and offer a more even drying process. The drying process for full washed coffee could last around 2-3 weeks and during this step, the beans were turned or raked several times a day. Once the parchments are completely dry, they are then sent out for hulling to remove the coffee bean from the parchment and then off to the dry
About Bumi:
“Bumi” means earth in Bahasa Indonesia. It is our take on a classic Indonesian profile. The coffees under Bumi taste profile have the same chocolatey, brown spices and sweetness that people like about Indonesian coffee but elevated with extra vibrancy and structure.
This year, we utilised a combination of full washed & honey methods as well as yeast-based inoculants
About Karana:
Karana is a boutique producer/processor of Indonesian Specialty Coffee, focusing on Bali. They started as a micro-lot processor in developing quality Arabica and Robusta products, from the coffee plantations of Kintamani and Tabanan, but are now operators of these farms as well.
The coffees are processed in Bali’s cultural centre of Ubud, one hour from the Arabica coffee plantations of Kintamani. They train and employ local folks contributing annual projects, centred on community education and the environment.
Karana Global is one of the local thought leaders in coffee fermentation techniques and we are very excited to bounce off ideas with this year’s harvest. Together, we processed all of our CATUR Collection taste profiles as well.
