About this coffee:
This lot is fermented in anaerobic way inside a closed tank. Cherries were inoculated with a starter mixture of Klebsiella and Pichia before we let it fermented for a few days. Cherries then pulped leaving the mucilage as much as possible. These parchment then dried on raised beds with the mucilage giving the sweetness from the mucilage.
The harvest season in this year is quiet challenging with more rainy days and foggy night throughout this harvest, including the peak harvest. This resulted an additional drying time, which is around 3 weeks instead of 2 weeks.
About Pucuk:
“Pucuk” means the tip of a tea leaf in Sanskrit. This taste profile includes tea-like elegance with calmer fruit notes.We were able to achieve this through the combination of yeast, bacteria & fungi based inoculants as well as utilizing the honey method processing style.
About Bright Java:
Bright Java started in 2016, after Troy and Aswan realized that small holder farmers could be better served, in the International coffee markets. They are in Salatiga, a small town in Central Java, where they source coffees from neighboring regions.
We came across Bright Java for the first time at a cupping session on an Indonesian export trade show in 2019. There were about 40 coffees on the table, and their coffees were a standout among others. We then got in touch with Troy and planned for the 2020 harvest. Together we processed coffees from 3 regions- Tosoro Village in Merbabu, with around 30 families looking after the coffees and Banyuwangi where the elevations go as high as 1600 MASL.
